Our olive groves cover an area of about 6,60 hectares. They are young since they were planted in the winter 1995. We have 1970 plants practically ready for the production which we expect almost certainly, trusting in good weather, to occur in the next agricultural season of 2000 - 20001 already.
The measure of the plantation is 4 x 8 metres with a southern exposure, the variety of these olives is called "Cellina di Narḍ" which is a local one. The growing system we adopt is the mono-cone and is useful for the future mechanical picking by means of an hydraulic shaker.
The picking of the olives will be done when they get darker and ripened at ¾ in order to guarantee that the oil keeps the best aromatic and organoleptic characteristics.We are also projecting both to transform the olives and bottle the oil from ourselves.
The whole olive groves cultivation has been treated biologically from the moment of the implantation.
In the 2002 there is the first oil with 0,3 acidity. The olives are gathered with shakers an nets.
For the coming years we estimate an olive production of around 1.000 hundred kilograms equal to an output in oil of about 100 hundred kilograms.
